In honour of the Canada Day long weekend, a simple preparation.

Cheesecake Strawberries
1 pint local strawberries
½ cup spreadable cream cheese
1/3 cup icing sugar (to taste)
2 Tbsp orange liqueur or orange flower water or 2 drops orange extract
Rinse berries. Slice off the hull, allowing the strawberries to sit upright. Cut a shallow cross into the other end of the strawberry. Do not slice deeply or the strawberry will fall apart.
Mix together the remaining ingredients and spoon into a piping bag. Gently pry open a strawberry and pipe a bit of cheese mixture in. Sit the finished strawberries on a fancy plate and serve immediately.
