It seems like only yesterday Apt613 was talking about the brand new Waller St. brewery. It was over 365 yesterdays ago.
That’s right, the speakeasy-themed brewery is turning one. To celebrate, they’re throwing a party August 5 that’s gonna be the butterfly’s boots. The basement brewery is taking over their upstairs neighbour, Level One, and partying like it’s 1929. There will be bowler hats, suspenders, music, food, beer and… even banter!
So let’s talk beer. In addition to the regular lineup of Bootleg Blonde, Moonlight Porter and Speakeasy Red, seasonals Hideaway Hefe and Blind Pig IPA (if it’s still at the brewery, try the 644 yeast version – trust me) are going to be on tap. Brewer and resident mad-scientist Marc-André Chainey has created a special beer to celebrate year one: Scotch River Woodland sour. Scotch River is very different, in the very best way: it’s brewed with 200 litres of birch sap, 10 pounds of Norwegian spruce tips and with Waller Street’s very own Lactobacillus culture isolated right in the brewery—a bacteria. It weighs in at 6.8%. After thorough research, I can attest it drinks easy and has a clean dry finish.
Update: At the anniversary party will also be a rum/oak version of the Scotch River on cask, as well as a new and yet-to-be-named black DIPA.
