In this latest video by the National Arts Centre, executive chef Kenton Leier sits down with resident chef Renée Lavallée in the 1 Elgin dining room to talk about cooking philosophies, ingredients and influence from their home cities, and how one navigates a culinary career as a parent.
Chef Renée Lavallée is the co-owner of The Canteen, a neighbourhood restaurant in downtown Dartmouth, Nova Scotia. She was recently one of the resident chefs here in Ottawa, at the National Arts Centre, whose 1 Elgin restaurant presents an annual lineup of Canadian chefs—much like the NAC Orchestra or NAC theatre companies book performing artists.
The Resident Chef program was created to provide somewhat of a culinary “stage” in the NAC to showcase talented chefs from all over Canada! New chefs are featured around every three months. Find out more about the National Art Centre’s resident chefs here.
